The dreary, cold weather is really bringing me down, so this week I chose a recipe from my summer favorites with hope it will summons a change of moods from Mother Nature!
This salad is perfect! Not too light, not too heavy.. it's basically the un-smashed version of guacamole. I will be eating this for lunch paired with cottage cheese and mandarin oranges. Read after the jump for the recipe!
Summer Avocado Salad
Ingredients:
2 Avocados
Juice of 1/2 of a lemon
4-6 Roma tomatoes
1/2 med. Red onion
1 English cucumber
2 tbsp. Olive oil
Small bunch of Cilantro, chopped.
Sea Salt / Pepper
Directions:
Dice avocado, tomatoes, red onion & cucumber.
Combine in a large mixing bowl.
Add in lemon juice and olive oil.
Chop cilantro & add in.
Sprinkle with sea salt & pepper to taste.
Gently fold ingredients together.
Serve & Enjoy!
