Summer Avocado Salad!

The dreary, cold weather is really bringing me down, so this week I chose a recipe from my summer favorites with hope it will summons a change of moods from Mother Nature!  
This salad is perfect! Not too light, not too heavy.. it's basically the un-smashed version of guacamole. I will be eating this for lunch paired with cottage cheese and mandarin oranges.  Read after the jump for the recipe!

21 Day Fix Zucchini Taco Boats!

Squash is one of my favorite carb replacements! There are so many varieties, and they take on almost any flavor you pair them with.  I prefer to eat my carbs early in the day, so I'm always on the hunt for lower carb dinner recipes.  This is by far one of my favorites!  I searched for the perfect recipe, but inevitably chose to wing it.  Luckily, I'm getting better at writing things down as I go.. so you may check out the recipe after the jump!

FIXATE!

Fixate, the new cook book by Autumn Calabrese, had been at the top of my wishlist since its release a few weeks ago. 
It features 101 recipes that are 21 Day Fix approved, and I finally purchased my copy. 
I can't wait to try them all!

21 Day Fix Tips!


   21 Day Fix has been my savior! The workouts are only 30 minutes long, making it ideal for a busy mom such as myself.  The nutrition guide is super simple to follow, and the portion control container system developed by Autumn Calabrese is genius! The combination allowed me to drop 41 lbs. in 6 months.  As a Team Beachbody coach, I always encourage all of my clients to begin with this program because it teaches them clean eating in the correct portion sizes without calorie counting.  Who has time for calorie counting? Definitely not me!

Friday Night Feast!

    Yellow Squash & Meatballs


I love these meatballs, they are one of my go to family friendly recipes!  These have a long cook time but are very quick to prep, easy to cook, and they freeze great! Personally, I make a double batch ahead of time and freeze half for a quick meal later in the month! 
Usually I serve them with sauce over spaghetti squash, but I had a yellow squash on hand so I tried that this evening.

Fix With Me!

On day 1 of 21 Day Fix I weighed in at 181 lbs. 
After 3 rounds of 21 Day Fix and 1 round of the nutrition plan combined with some other workouts I'm down to 145 lbs, a loss of 36 lbs. since March!
 I feel better than ever.
